The longer your wine is aged in Oak barrels the better it gets, right? Not really! Oak aging is an essential part of good winemaking. However, while the wine will absorb tannin from the barrel, the wine is also surrendering something to the barrel.  Monitoring the aging process is essential to finding the optimum balance for your wine.
